Optimizing the usability of food chain information of broilers slaughtered in The Netherlands
This PhD project aims to optimize the usability of food chain information of broilers slaughtered in The Netherlands. Identify the extent to which different indicators in FCI data of broilers can be used to flag food safety hazards at time of slaughter. This is expected to meet EFSA recommendations about the development of a more risk based meat inspection and meat safety assurance system, integrated in the whole food chain. The PhD candidate will research if there are correlations between ante-mortem and post-mortem data of broilers slaughtered in the Netherlands by analyzing data retrospectively. This will include both visible hazards seen during post-mortem meat inspection (for example pathological lesions) but also the invisible zoonotic hazards at microbiological sampling for Campylobacter and Salmonella will be taken into account.
